  • 150 gSpinach
  • 2 pcsGreen onion
  • 250 mlVegetable broth
  • 2 tbspSoy sauce
  • 1 tspSesame oil
  • 1 tbspSesame
  • 0.25 tspSalt
  • 0.25 tspPepper
  • 500 mlWater

Instructions

    Prepare the spinach

    • Wash spinach thoroughly
    • Blanch briefly in boiling water
    • Shock in ice water
    • Squeeze well and roughly chop

    Mix the egg base

    • Whisk eggs in a bowl
    • Stir in the broth
    • Blend in soy sauce and sesame oil
    • Season with salt and pepper
    • Fold in scallions

    Steam until set

    • Place spinach into a heatproof bowl
    • Pour the egg mixture over it
    • Cover the bowl
    • Steam gently until just set
    • Let rest briefly
  4. 4

    Top and serve

    • Toast sesame in a dry pan
    • Sprinkle sesame over the steamed eggs
    • Serve warm
