- 144 gGreen onion

Preparation
- Trim the lettuce: remove tough outer leaves, halve each head and rinse well in cold water. Let drain.
- Place the ingredients in a large pot so the lettuce halves fit side by side: shelled peas, halved lettuces, chopped parsley, spring onions, sugar and a pinch of salt.
- Distribute the butter in pieces over the ingredients, add 2–3 tbsp hot water, cover the pot and cook over medium heat until the peas are tender and the lettuce has wilted but not become mushy (about 12–18 minutes).
- Remove the lid and reduce briefly over low heat if there is excess liquid. Adjust seasoning with more salt or pepper if needed.
- Serve hot, sprinkled with extra chopped parsley.
