Make the quiche batter
- Combine the milk and heavy cream in a saucepan over medium heat. Heat until scalding and a skin forms, then remove from the heat and let cool slightly.
- Put the eggs, kosher salt, freshly ground white pepper and grated nutmeg into a blender.
- With the blender running, slowly drizzle in the slightly cooled milk-cream mixture and then blend on high for 1 minute until smooth and a bit frothy.
- Use immediately in your quiche recipe or cover and refrigerate for later use.
