  • 480 mlCream
  • 6 pcsEgg
  • 1 tbspSalt
  • 0.25 tspPepper
  • 0.5 gNutmeg

    Make the quiche batter

    • Combine the milk and heavy cream in a saucepan over medium heat. Heat until scalding and a skin forms, then remove from the heat and let cool slightly.
    • Put the eggs, kosher salt, freshly ground white pepper and grated nutmeg into a blender.
    • With the blender running, slowly drizzle in the slightly cooled milk-cream mixture and then blend on high for 1 minute until smooth and a bit frothy.
    • Use immediately in your quiche recipe or cover and refrigerate for later use.
