  • 0.3 gPepper
  • 10 mlSesame oil
  • 25 gEgg
  • 24 gStarch
  • 75 mlVegetable oil
  • 113 gPasta
  • 80 gOnion
  • 5 gGarlic
  • 5 gGinger
  • 100 gMung bean sprouts
  • 70 gMushroom
  • 240 mlWater
  • 15 mlOyster sauce
  • 5 gSugar
  • 5 mlSoy sauce

    Marinating the beef

    • Slice the beef into thin strips.
    • In a bowl, combine the beef with salt, pepper, 1 tsp sesame oil, 1/2 egg (about 25 g), the cornstarch (3 tbsp) and 1 tbsp oil. Mix well and let rest 10–15 minutes.

    Prepare noodles

    • Bring a large pot of water to a boil.
    • Add the noodles (about 113 g dry) briefly until just cooked; time depends on noodle type.
    • Drain and rinse under cold water, then drain well.

    Stir-fry

    • Heat 2 tbsp oil in a wok or large frying pan over high heat.
    • Cook the marinated beef in batches until about medium done, 1–2 minutes. Set aside.
    • Add 2 tbsp oil to the wok, sauté onion, garlic and ginger briefly, then add bean sprouts and mushrooms.
    • Add ~100–150 ml water so vegetables are slightly submerged and cook until crisp-tender.
    • Add the drained noodles to the wok.
    • Mix oyster sauce, 1 tsp sesame oil, sugar and soy sauce to make the sauce and pour over the noodles.
    • Return the beef to the wok and toss everything together until heated through and glossy. Adjust seasoning if needed and serve hot.
