- 30 mlOil
- 450 gChicken breast
- 24 gGarlic
- 30 gShallot
- 3 pcsChili
- 30 mlFish sauce
- 10 mlSoy sauce
- 8 gSugar
- 20 gBasil

Preparation
- Cut the chicken into even pieces if needed. Finely chop the garlic and shallots. Halve or slice the chillies (to taste). Pick the basil leaves.
- Have sauces and seasonings ready.

Brown the chicken
- Heat a wok or large frying pan until very hot and add 1 tbsp (15 ml) vegetable oil.
- When the oil is smoking hot, add the chicken and stir-fry on high heat for 8–10 minutes until browned all over.
- Remove the chicken with a slotted spoon and set aside.

Fry aromatics
- Reheat the wok and add the remaining oil (1 tbsp = 15 ml).
- Toss in garlic and shallots and stir-fry for about 3 minutes until golden.

- Return the chicken to the wok.
- Add chillies, fish sauce, soy sauce and sugar.
- Stir-fry on high heat for another 8–10 minutes until chicken is cooked through.
- Stir in basil leaves, let them wilt briefly and serve immediately.
