- Place a small skillet over medium-high heat.
- Pour in the oil (100 ml) and heat until hot and just beginning to smoke.

Fry the eggs
- Crack each egg onto a plate and lightly season with salt.
- Gently slide the egg into the hot oil.
- Tilt the pan forward and use a wooden spoon to baste hot oil over the yolk so the white sets quickly and fully encloses the yolk.
- When the white is set and edges are golden, lift the egg with a slotted spoon and drain briefly on a cloth.
