    Preparation

    • Place a small skillet over medium-high heat.
    • Pour in the oil (100 ml) and heat until hot and just beginning to smoke.

    Fry the eggs

    • Crack each egg onto a plate and lightly season with salt.
    • Gently slide the egg into the hot oil.
    • Tilt the pan forward and use a wooden spoon to baste hot oil over the yolk so the white sets quickly and fully encloses the yolk.
    • When the white is set and edges are golden, lift the egg with a slotted spoon and drain briefly on a cloth.

    To serve

    • Serve the drained eggs immediately. Adjust seasoning if needed.
    • Suggested accompaniments: buttered toast, toasted bread or a green salad.
