- 240 mlPeach nectar
- 110 gSugar
- 40 gGinger
- 5 mlVanilla extract
- 1.5 gSalt
- 30 gButter

Make the glaze
- Combine peach nectar, brown sugar, finely minced crystallized ginger, vanilla extract and salt in a small saucepan.
- Bring to a boil over medium-high heat and simmer, stirring occasionally, until reduced by half (about 8–12 minutes). Remove from heat and keep warm.

Grill the peaches
- Halve and pit the peaches. Brush the cut sides lightly with melted butter.
- Place on a medium grill (or grill pan) and grill until marked and tender (about 3–5 minutes per side). Brush often with the warm glaze while grilling.

Serve
- Place remaining glaze in a bowl and toss the grilled peaches briefly to coat.
- Arrange on plates and serve immediately.
