    Preparation

    • Cut the salmon into 4 even steaks (darnes), about 2–2.5 cm thick. Pat dry with paper towels.
    • Season both sides lightly with salt.
    • Brush or drizzle both sides of the steaks with olive oil.
    • Grill over moderate heat (on a grill or in a hot grill pan) for 3–5 minutes per side, until the surface is golden and the interior is just cooked.
    • Let rest 1–2 minutes before serving.
