  • 100 gBacon
  • 60 gTomato sauce
  • 60 gWorcestershire sauce
  • 1 pcsLemon
  • 200 gRock salt

    Prepare

    • Preheat oven to 180 °C. Spread coarse rock salt in a roasting pan so the oysters sit stably.
    • Mix tomato sauce and Worcestershire sauce in a small bowl.
    • Dice the bacon.
    • Shuck oysters (if not already shucked) and keep them in their half shells; discard excess liquid.

    Top and sauce

    • Place diced bacon generously over the raw oysters.
    • Spoon the Kilpatrick sauce over each oyster, covering the bacon and oyster.

    Cook

    • Nestle the oysters on the rock salt bed so they do not tip.
    • Bake at 180 °C for 10–14 minutes until oysters are firm and bacon is crispy, or grill under high heat 5–7 minutes until done.
    • Remove carefully from oven.

    Serve

    • Serve oysters with lemon wedges.
    • Optionally serve extra Kilpatrick sauce on the side.
