  • 250 gMacaroni
  • 50 gButter
  • 50 gGruyère
  • 50 gParmesan
  • 22 gMilk
  • 3 gFlour
  • 20 gBreadcrumbs
  • 8 gSalt
  • 1 gPepper
  • 0.5 gNutmeg

    Cook the macaroni

    • Bring a large pot of water to a boil and add salt.
    • Cook 250 g macaroni in the boiling water until al dente, according to package instructions.
    • Drain the macaroni well.

    Make the mixture

    • Place the hot macaroni in a large bowl.
    • Add 30 g butter and 100 g grated cheese (50 g Gruyère + 50 g Parmesan) and toss briefly.
    • Season with freshly ground pepper and a pinch of nutmeg.
    • Stir in 2 tbsp (≈30 g) béchamel sauce and combine well.

    Assemble and gratin

    • Butter a baking dish and transfer the macaroni, smoothing the surface.
    • Mix 20 g grated cheese with 20 g breadcrumbs and sprinkle on top.
    • Dot or drizzle 15 g butter over the crust.
    • Bake in a preheated oven at 200 °C for 10–15 minutes until golden and crisp.
    • Let rest briefly and serve hot.
