Cook the macaroni
- Bring a large pot of water to a boil and add salt.
- Cook 250 g macaroni in the boiling water until al dente, according to package instructions.
- Drain the macaroni well.

Make the mixture
- Place the hot macaroni in a large bowl.
- Add 30 g butter and 100 g grated cheese (50 g Gruyère + 50 g Parmesan) and toss briefly.
- Season with freshly ground pepper and a pinch of nutmeg.
- Stir in 2 tbsp (≈30 g) béchamel sauce and combine well.

Assemble and gratin
- Butter a baking dish and transfer the macaroni, smoothing the surface.
- Mix 20 g grated cheese with 20 g breadcrumbs and sprinkle on top.
- Dot or drizzle 15 g butter over the crust.
- Bake in a preheated oven at 200 °C for 10–15 minutes until golden and crisp.
- Let rest briefly and serve hot.
