Make the dough
- Mix flour and sugar briefly. Beat the egg yolks and whole eggs.
- Add softened butter and knead quickly to a firm, smooth dough. If the dough is too dry, add 1–2 tbsp cold water.
- Wrap the dough in plastic and chill for 30 minutes.

Cut and fry the dough cubes
- Roll the chilled dough about 1 cm thick and cut into small cubes (about 1–1.5 cm).
- Heat clarified butter in a pan over medium heat and fry the dough cubes in batches until golden. Drain on paper towels.

Prepare sugar mixture and combine
- For the syrup, heat the sugar with orange blossom water (or rosewater) in a wide pan until it melts into a clear, amber caramel. Skim off foam.
- Add candied orange peel, lemon zest, sliced almonds and the crushed spices (cinnamon, cloves, cardamom) and mix briefly. Do not overcook.
- Stir the fried dough cubes into the hot sugar mixture, press the mixture into a buttered mold and let cool completely.
- Turn out, slice and serve.
