  • 280 gOrange
  • 100 gWalnut
  • 120 mlCream
  • 20 mlLemon juice
  • 20 mlOrange juice
  • 0.3 gSugar

    Prepare

    • Peel (if desired), seed and halve the grapes.
    • Peel and dice the pineapple.
    • Segment or dice the oranges and remove excess white pith.
    • Coarsely chop the walnuts and set aside.

    Dressing and plating

    • Whisk cream, lemon juice, orange juice, a pinch of salt and a pinch of sugar in a bowl. Taste — the dressing should be fresh and slightly citrusy.
    • Gently fold fruit and walnuts with the dressing so the pieces keep their shape.
    • Fill hollowed orange shells with the fruit salad and serve on ice or small lettuce leaves. Serve the remaining cream in a small sauce boat.
