- Peel (if desired), seed and halve the grapes.
- Peel and dice the pineapple.
- Segment or dice the oranges and remove excess white pith.
- Coarsely chop the walnuts and set aside.

Dressing and plating
- Whisk cream, lemon juice, orange juice, a pinch of salt and a pinch of sugar in a bowl. Taste — the dressing should be fresh and slightly citrusy.
- Gently fold fruit and walnuts with the dressing so the pieces keep their shape.
- Fill hollowed orange shells with the fruit salad and serve on ice or small lettuce leaves. Serve the remaining cream in a small sauce boat.
