Preparation and mashed potatoes
- Peel potatoes, cut into even pieces and cook in plenty of salted water until tender (about 20–25 minutes).
- Drain the potatoes, let them steam dry briefly and mash very finely or press through a ricer.
- Stir butter (100 g) into the hot mashed potatoes, then mix in 2 eggs (approx. 100 g). Season with salt, freshly ground pepper and grated nutmeg.
- Fold grated Chester (100 g) into the mixture until smooth and shapeable. If too soft, chill briefly.

Shape and bake
- Preheat oven to 200 °C (392 °F) top/bottom heat. Lightly grease a baking tray with butter (about 10 g).
- Shape small patties from the potato-Chester mixture and place them on the prepared tray.
- Brush the patties lightly with the remaining egg (about 50 g) beaten.
- Top each patty with a thin slice of Chester (total about 40 g) and bake in the preheated oven for 7–8 minutes until the cheese softens and the surface is lightly colored.
- Let cool briefly and serve warm.
