  • 600 gPotato
  • 500 gQuark
  • 80 mlMilk
  • 20 gFlaxseed oil
  • 10 gChives
  • 8 gSalt
  • 1 gPepper

Instructions

    Cook the potatoes

    • Wash the potatoes thoroughly
    • Place in a pot and cover with cold water
    • Salt the water and bring to a boil
    • Simmer over medium heat until tender
    • Drain and let steam off briefly

    Chop the chives

    • Wash the chives and shake dry
    • Slice into fine rings

    Mix the quark

    • Add quark to a bowl
    • Stir in milk until creamy
    • Season with salt and pepper
    • Fold in the chives

    Finish with flax oil

    • Divide the quark onto plates
    • Drizzle flaxseed oil over the top
    • Serve with the skin-on potatoes
