  • 360 gSalmon fillet
  • 70 gButter
  • 2 cloveGarlic
  • 20 mlLemon juice

    • Trim woody ends
    • Pat asparagus dry
    • Preheat the oven

    Mix almond crust

    • Roughly chop almonds
    • Combine with Parmesan and lemon zest
    • Season with pepper

    Roast asparagus

    • Toss asparagus with oil and salt
    • Spread on a sheet pan
    • Roast in the oven

    Sear the salmon

    • Pat salmon dry
    • Sear in a hot pan
    • Flip and cook briefly

    Make lemon butter

    • Melt the butter
    • Briefly sauté the garlic
    • Stir in lemon juice
    • Season with salt

    • Place salmon on top of the asparagus
    • Press the almond mixture on top
