Preparation
- Prepare the sardines: if necessary, scale and gut them; remove as many bones as possible or use boneless fillets. Pat dry with paper towels.
- Mix the Dijon mustard with the cayenne (or keep cayenne separate for sprinkling). Season lightly with salt and pepper.
- Toast the bread slices or grill briefly until very hot. Spread butter thinly on the hot toasts right before serving.
- Generously coat both sides of each sardine with mustard, sprinkle lightly with red pepper and optionally some black pepper.
- Place the mustard-coated sardines immediately on the hot buttered toasts and serve hot.
