  • 240 gBread
  • 40 gButter
  • 40 gMustard
  • 1 gCayenne pepper
  • 2 gSalt

    Preparation

    • Prepare the sardines: if necessary, scale and gut them; remove as many bones as possible or use boneless fillets. Pat dry with paper towels.
    • Mix the Dijon mustard with the cayenne (or keep cayenne separate for sprinkling). Season lightly with salt and pepper.
    • Toast the bread slices or grill briefly until very hot. Spread butter thinly on the hot toasts right before serving.
    • Generously coat both sides of each sardine with mustard, sprinkle lightly with red pepper and optionally some black pepper.
    • Place the mustard-coated sardines immediately on the hot buttered toasts and serve hot.
