- Chill the beef and remove any connective tissue.
- Finely dice the onion.
- Separate and chill the egg yolk (one yolk total).

- Finely chop the beef or pass it twice through a 6–7 mm grinder plate.
- Loosely combine the chopped beef with egg yolk, Worcestershire sauce, whole-grain mustard, 1–3 drops hot sauce if using, chopped onion, salt and freshly ground pepper.
- Taste and adjust seasoning with more Worcestershire, salt or pepper if needed.

- Slice and optionally toast the bread.
- Spread the tartare on the bread slices or serve the tartare beside the toast.
