  • 227 gBeef
  • 1 pcsEgg yolk
  • 1 tspWorcestershire sauce
  • 1 tbspMustard
  • 0.15 mlChili sauce
  • 20 gOnion
  • 1 gSalt
  • 1 gPepper
  • 160 gBread

    Preparation

    • Chill the beef and remove any connective tissue.
    • Finely dice the onion.
    • Separate and chill the egg yolk (one yolk total).

    Preparation/Cooking

    • Finely chop the beef or pass it twice through a 6–7 mm grinder plate.
    • Loosely combine the chopped beef with egg yolk, Worcestershire sauce, whole-grain mustard, 1–3 drops hot sauce if using, chopped onion, salt and freshly ground pepper.
    • Taste and adjust seasoning with more Worcestershire, salt or pepper if needed.

    Plating and Serving

    • Slice and optionally toast the bread.
    • Spread the tartare on the bread slices or serve the tartare beside the toast.
    • Serve on chilled plates.
