Prepare the dough
- Cream the soft butter with 62.5 g of the sugar until fluffy.
- Beat in the 2 eggs one at a time until smooth.
- Add 125 g ground almonds and the flour and quickly knead into a firm, smooth dough. Do not overwork.

Roll out and cut
- Roll the dough out on a lightly floured surface to about 1 cm thickness.
- Cut into rectangular slices and place on a baking sheet lined with parchment paper.

Glaze, top and bake
- Beat the egg white (approx. 30 g) until frothy and brush over the slices.
- Mix the remaining 125 g almonds with the remaining 62.5 g sugar and sprinkle over the brushed slices.
- Bake in a preheated oven at 180 °C (160 °C fan) for 12–18 minutes until golden. Let cool briefly before serving.
