Preparation
- Preheat the oven to 180 °C.
- If present, remove skin from the chicken pieces and season all over with salt and pepper.

Sear
- Put the oil into a flameproof casserole.
- Render the bacon in the casserole until slightly browned. Reduce heat and add the onions, cook until translucent.
- Add the garlic and coarsely chopped mushrooms and sauté briefly.

Assemble
- Add the chicken pieces to the casserole on top of the vegetables.
- Pour in the red wine and add the parsley sprigs, thyme and bay leaves.

Bake
- Cover and bake in the preheated oven for about 45 minutes.

Thicken and finish
- A few minutes before the end of cooking, mix the flour with the olive oil to a paste.
- Stir this into the liquid in the casserole and turn the chicken pieces so they are well coated. Let the sauce thicken for a few minutes.
- Sprinkle chopped parsley over the dish before serving.
