Ingredients

  • 250 gButter
  • 1 pcsEgg
  • 30 mlRum
  • 146 gSugar
  • 352 gFlour
  • 900 gApple
  • 150 mlWine
  • 1 pcsLemon zest
  • 1 pcsCinnamon stick

Instructions

    Make the dough

    • Cream the butter until light and fluffy.
    • Beat in the egg and rum.
    • Gradually add the sugar and flour and mix to a smooth dough.
    • Press the dough into a greased 24–26 cm springform, leaving a slightly higher edge.

    Poach the apples briefly

    • Peel, core and cut apples into 8 wedges.
    • Combine wine, 50 g sugar, lemon zest and the cinnamon stick in a pan, add the apple wedges and simmer until tender but not falling apart (about 5–8 minutes).
    • Remove apples and let cool. Reduce the cooking liquid until syrupy.

    Assemble and bake

    • Arrange the cooled apple slices in overlapping concentric circles on the dough.
    • Bake in a preheated oven at 180 °C (top/bottom heat) for about 30–40 minutes until golden and cooked through.
    • Warm the reduced apple syrup and drizzle it over the apples when serving.
