  • 145 gButter
  • 2 pcsEgg
  • 230 gSugar
  • 1 tspAlmond extract
  • 230 gFlour
  • 1.5 tspBaking powder
  • 330 gApple
  • 10 gPowdered sugar

    Prepare

    • Preheat the oven to 160 °C (Gas Mark 3).
    • Lightly grease a 23 cm springform tin with butter.

    Make the batter

    • Gently melt the butter in a pan and pour into a large bowl.
    • Add the eggs, sugar and almond essence and stir well.
    • Fold in the self-raising flour and baking powder to form a stiff batter.

    Assemble and bake

    • Spread just under two-thirds of the batter into the prepared tin.
    • Peel, core and slice the apples and arrange them on top of the batter.
    • Cover the apples with the remaining batter and bake for 75–90 minutes, until a skewer comes out clean.

    Cool and serve

    • Allow the cake to cool slightly in the tin, then loosen sides and remove onto a plate. Cool completely.
    • Dust with sifted icing sugar and serve warm or cold, with cream if desired.
