Prepare
- Preheat the oven to 160 °C (Gas Mark 3).
- Lightly grease a 23 cm springform tin with butter.

Make the batter
- Gently melt the butter in a pan and pour into a large bowl.
- Add the eggs, sugar and almond essence and stir well.
- Fold in the self-raising flour and baking powder to form a stiff batter.

Assemble and bake
- Spread just under two-thirds of the batter into the prepared tin.
- Peel, core and slice the apples and arrange them on top of the batter.
- Cover the apples with the remaining batter and bake for 75–90 minutes, until a skewer comes out clean.

Cool and serve
- Allow the cake to cool slightly in the tin, then loosen sides and remove onto a plate. Cool completely.
- Dust with sifted icing sugar and serve warm or cold, with cream if desired.
