- 120 gWheat flour
- 90 gSugar
- 90 gButter
- 300 gApple
- 120 gBlackberry
- 0.25 tspCinnamon
- 200 gIce cream

Make the crumble
- Preheat oven to 190°C (170°C fan/gas 5).
- Tip the flour and caster sugar into a large bowl.
- Add the butter (60 g) in pieces and rub into the flour with your fingertips until you have a light, breadcrumb texture. Do not overwork.
- Spread the mixture evenly on a baking sheet and bake for 15 minutes or until lightly coloured. Remove and cool.

Cook the compote
- Peel, core and dice the apples into 2 cm pieces.
- Put the butter (30 g) and demerara sugar in a medium saucepan and melt over medium heat, cooking for about 3 minutes until it turns a light caramel.
- Stir in the apples and cook for 3 minutes.
- Add the blackberries and cinnamon and cook for another 3 minutes until the fruit softens.
- Remove from the heat, cover and leave for 2–3 minutes to finish in the pan's residual heat.

Finish & serve
- Spoon the warm fruit into an ovenproof dish and top evenly with the cooled crumble.
- Reheat in the oven for 5–10 minutes until the topping is crisp and lightly browned.
- Serve with scoops of vanilla ice cream.
