Preparation
- Peel, core and chop the apples. Put them in a pan with the sugar, 240 ml water, lemon juice and lemon zest.
- Simmer over medium heat until the apples are soft (about 10–15 minutes). Press the mixture through a fine sieve to obtain a smooth purée.
- Soak the gelatin leaves in 2 tbsp (≈30 ml) water until bloomed. Warm the bloomed gelatin gently until dissolved, strain it and stir into the warm apple purée.
- Pour into a prepared mould and chill in the fridge for several hours (at least 2–4 hours) until set. Unmold or serve directly from the dish.
