- 300 gWheat flour
- 200 gButter
- 150 gSugar
- 3 pcsEgg
- 0.3 gSalt
- 800 gApple
- 4 gCinnamon
- 15 gLemon juice
- 200 mlCream
- 10 gCornstarch
- 5 gVanilla extract

Make the pastry
- Mix flour, sugar and salt in a bowl.
- Cut cold butter into cubes and work into the flour with your hands or a mixer until crumbly.
- Add the egg and quickly bring into a smooth dough. If needed, add 1–2 tbsp cold water.
- Shape the dough into a disk, wrap in cling film and chill at least 30 minutes.

Shape and top the tart
- Preheat oven to 180 °C (350 °F).
- Roll out the chilled dough and use about 3/4 of it to line a 24 cm tart pan with a rim.
- Prick the base with a fork several times.
- Peel, core and thinly slice the apples. Toss with lemon juice and arrange on the dough.
- Sprinkle the apples evenly with cinnamon and sugar.

Par-bake, add cream glaze and finish baking
- Bake the tart about 18–22 minutes until the base is gaining color but the filling is not fully set.
- Meanwhile whisk cream, eggs, sugar, cornstarch and vanilla until smooth.
- Pour the glaze evenly over the apples.
- Bake another 15–20 minutes until the glaze is set and lightly golden.
- Remove from oven, let cool slightly and serve warm or cold.
