  • 200 gEgg
  • 120 gSugar
  • 1.5 gSalt
  • 5 gVanilla extract
  • 946 mlMilk
  • 10 gButter

    Preparation

    • Beat the eggs, sugar, salt and vanilla extract together until uniform.
    • Scald the milk (heat to nearly boiling).
    • Slowly add the hot milk to the egg mixture while stirring constantly to temper the eggs.
    • Strain the mixture into a greased baking dish or several small greased ovenproof molds.
    • Place the dish or molds into a larger pan filled with hot water halfway up the sides (water bath).
    • Bake in a preheated oven at 150–160 °C (300–325 °F) for 30–40 minutes, until a knife inserted into the center comes out clean.
    • Remove carefully from the water bath and let cool slightly. Serve warm or chilled.
