  • 480 gBanana
  • 30 gButter
  • 2 tbspFlour
  • 40 gSugar
  • 50 mlCherry
  • 1 gCherry

    Preparation

    • Peel the bananas and halve lengthwise (or leave whole).
    • Measure sugar and put flour on a shallow plate.
    • Gently warm the kirsch (or rum); do not boil.

    Frying

    • Clarify butter (or use ready-clarified butter) and heat in a large pan over medium heat.
    • Lightly dust the bananas with flour and shake off excess.
    • Fry the bananas 1–2 minutes per side until golden and caramelized.

    Flambé & Serve

    • Arrange fried bananas on a long platter.
    • Sprinkle a little sugar over the hot bananas.
    • Warm the kirsch (or rum) briefly in the pan, remove from heat and pour over the bananas.
    • Ignite the alcohol carefully and flambé; the flame will die out on its own.
    • Serve immediately.

    Variant: Banana Jubilee

    • Add pitted sweet cherries (fresh or jarred) around the bananas while pan-frying.
    • Heat briefly and flambé with kirsch or rum as above.
    • Suggested amount: about 150 g cherries (optional).
