Preparation
- Peel the bananas and halve lengthwise (or leave whole).
- Measure sugar and put flour on a shallow plate.
- Gently warm the kirsch (or rum); do not boil.

Frying
- Clarify butter (or use ready-clarified butter) and heat in a large pan over medium heat.
- Lightly dust the bananas with flour and shake off excess.
- Fry the bananas 1–2 minutes per side until golden and caramelized.

Flambé & Serve
- Arrange fried bananas on a long platter.
- Sprinkle a little sugar over the hot bananas.
- Warm the kirsch (or rum) briefly in the pan, remove from heat and pour over the bananas.
- Ignite the alcohol carefully and flambé; the flame will die out on its own.
- Serve immediately.

Variant: Banana Jubilee
- Add pitted sweet cherries (fresh or jarred) around the bananas while pan-frying.
- Heat briefly and flambé with kirsch or rum as above.
- Suggested amount: about 150 g cherries (optional).
