Ingredients

  • 910 gPork rib
  • 60 mlSoy sauce
  • 43 gHoney
  • 40 gHoisin sauce
  • 30 mlWhite wine vinegar
  • 15 mlSake
  • 6 gGarlic clove
  • 4 gSugar
  • 1.1 gPepper
  • 30 mlPork stock
  • 3 gSalt
  • 4 gCumin

Instructions

    Marinate

    • Place the spare ribs in a large shallow dish in a single layer.
    • In a small bowl mix soy sauce, honey, hoisin, white vinegar, sake, minced garlic, sugar, white pepper, pork stock and optional cumin.
    • Pour the marinade over the ribs and coat both sides.
    • Cover and marinate in the fridge for at least 6 hours or overnight, basting occasionally.

    Prepare for roasting

    • Preheat oven to 190 °C.
    • Place a large shallow roasting pan on the bottom of the oven and add a small amount of water.
    • Put the marinated ribs on a roasting rack and place in the oven.

    Roast

    • Roast ribs for 45 minutes at 190 °C, basting occasionally.
    • They should be nearly cooked and tender.

    High heat finish

    • Increase oven temperature to 230 °C.
    • Roast for an additional 15 minutes until caramelized and browned.
    • Remove and let rest 5 minutes before cutting.

    Serve

    • Serve hot or cold. Season with extra salt and freshly ground black pepper to taste.
