- 910 gPork rib
- 60 mlSoy sauce
- 43 gHoney
- 40 gHoisin sauce
- 30 mlWhite wine vinegar
- 15 mlSake
- 6 gGarlic clove
- 4 gSugar
- 1.1 gPepper
- 30 mlPork stock
- 3 gSalt
- 4 gCumin
Instructions

Marinate
- Place the spare ribs in a large shallow dish in a single layer.
- In a small bowl mix soy sauce, honey, hoisin, white vinegar, sake, minced garlic, sugar, white pepper, pork stock and optional cumin.
- Pour the marinade over the ribs and coat both sides.
- Cover and marinate in the fridge for at least 6 hours or overnight, basting occasionally.

Prepare for roasting
- Preheat oven to 190 °C.
- Place a large shallow roasting pan on the bottom of the oven and add a small amount of water.
- Put the marinated ribs on a roasting rack and place in the oven.

Roast
- Roast ribs for 45 minutes at 190 °C, basting occasionally.
- They should be nearly cooked and tender.

High heat finish
- Increase oven temperature to 230 °C.
- Roast for an additional 15 minutes until caramelized and browned.
- Remove and let rest 5 minutes before cutting.

- Serve hot or cold. Season with extra salt and freshly ground black pepper to taste.
