- 450 gBeef
- 450 gBroccoli
- 2 tbspRapeseed oil
- 20 mlSoy sauce
- 2 tbspOyster sauce
- 10 mlRice wine
- 60 mlChicken broth
- 1.5 tspCornstarch
- 2 pcsGarlic
- 15 mlWater
- 0.13 tspPepper

Marinate the beef
- Stir together soy sauce, rice wine, 1/2 tsp cornstarch and black pepper in a bowl.
- Slice the sirloin thinly against the grain, add to the marinade and toss to coat.
- Let stand for 10 minutes.

Prepare the sauce
- Whisk together oyster sauce, rice wine, soy sauce and chicken stock in a small bowl.
- Set aside.

Blanch or steam the broccoli
- Bring a pot of water to a boil.
- Cook broccoli florets about 2 minutes until crisp-tender, then drain well or shock in cold water and drain.
- Set aside.

Stir-fry and finish
- Heat a wok or large frying pan over high heat until a bead of water sizzles and evaporates.
- Add the oil and swirl to coat.
- Add the marinated beef in a single layer and let fry undisturbed for 1 minute, then flip the slices.
- Add the minced garlic and stir-fry 30–60 seconds until the beef is nearly cooked.
- Pour in the sauce. Mix cornstarch and water, add the slurry and stir until the sauce boils and thickens (about 30 seconds).
- Stir in the broccoli, heat through and serve immediately.

- Serve hot, traditionally with steamed rice.
- Optional: sprinkle sesame seeds or sliced spring onions.
