Ingredients

  • 450 gBeef
  • 450 gBroccoli
  • 2 tbspRapeseed oil
  • 20 mlSoy sauce
  • 2 tbspOyster sauce
  • 10 mlRice wine
  • 60 mlChicken broth
  • 1.5 tspCornstarch
  • 2 pcsGarlic
  • 15 mlWater
  • 0.13 tspPepper

Instructions

    Marinate the beef

    • Stir together soy sauce, rice wine, 1/2 tsp cornstarch and black pepper in a bowl.
    • Slice the sirloin thinly against the grain, add to the marinade and toss to coat.
    • Let stand for 10 minutes.

    Prepare the sauce

    • Whisk together oyster sauce, rice wine, soy sauce and chicken stock in a small bowl.
    • Set aside.

    Blanch or steam the broccoli

    • Bring a pot of water to a boil.
    • Cook broccoli florets about 2 minutes until crisp-tender, then drain well or shock in cold water and drain.
    • Set aside.

    Stir-fry and finish

    • Heat a wok or large frying pan over high heat until a bead of water sizzles and evaporates.
    • Add the oil and swirl to coat.
    • Add the marinated beef in a single layer and let fry undisturbed for 1 minute, then flip the slices.
    • Add the minced garlic and stir-fry 30–60 seconds until the beef is nearly cooked.
    • Pour in the sauce. Mix cornstarch and water, add the slurry and stir until the sauce boils and thickens (about 30 seconds).
    • Stir in the broccoli, heat through and serve immediately.

    Serve

    • Serve hot, traditionally with steamed rice.
    • Optional: sprinkle sesame seeds or sliced spring onions.
