- Beat the eggs in a bowl.
- Brush the chicken wings with the beaten egg and season liberally with the poultry seasoning.

- Dredge the egg‑coated wings evenly in cornmeal so they are well coated.
- Fry in batches at about 180 °C (350 °F) until golden (about 12 minutes per batch). Drain on a rack.

Toss in Sauce and Serve
- Whisk hoisin, dark soy sauce, hot sauce, minced garlic and ginger in a large bowl.
- Add the hot fried wings and toss until evenly coated with the glaze.
- Serve immediately.
