  • 1200 gChicken wings
  • 15 gPoultry seasoning
  • 200 gCornmeal
  • 100 gEgg
  • 90 gHoisin sauce
  • 15 gSoy sauce
  • 30 gChili sauce
  • 7.5 gGarlic
  • 7.5 gGinger
  • 100 mlOil

    Prepare

    • Beat the eggs in a bowl.
    • Brush the chicken wings with the beaten egg and season liberally with the poultry seasoning.

    Breading and Frying

    • Dredge the egg‑coated wings evenly in cornmeal so they are well coated.
    • Fry in batches at about 180 °C (350 °F) until golden (about 12 minutes per batch). Drain on a rack.

    Toss in Sauce and Serve

    • Whisk hoisin, dark soy sauce, hot sauce, minced garlic and ginger in a large bowl.
    • Add the hot fried wings and toss until evenly coated with the glaze.
    • Serve immediately.
