Ingredients

  • 125 gChocolate
  • 250 mlWater
  • 500 mlMilk
  • 50 gSugar
  • 2 pcsEgg
  • 5 mlVanilla extract
  • 1.5 gCinnamon
  • 40 gZwieback

Instructions

    Melt the chocolate

    • Chop the chocolate finely.
    • Bring the water to a boil in a small pot, remove from heat and add the chopped chocolate.
    • Warm gently over low heat, stirring until the chocolate is fully melted into a smooth paste.

    Finish the soup

    • Add the milk and sugar to the chocolate paste and stir while heating.
    • Bring to a gentle simmer (do not boil vigorously).
    • Whisk the egg yolks in a small bowl. Temper by stirring a few tablespoons of hot soup into the yolks, then pour back into the pot while stirring until the soup slightly thickens. Do not boil afterwards.
    • Season with vanilla or cinnamon and serve hot.

    Meringue dumplings (optional)

    • Beat the egg whites with 1–2 tbsp sugar until stiff peaks form.
    • Spoon small mounds onto the hot (not boiling) soup and let set briefly.
    • Sprinkle with cinnamon sugar if desired.

    Serve

    • Ladle into warmed bowls, top with meringue if used and dust with cinnamon sugar.
    • Serve with rusk.
