  • 2000 gBeef
  • 500 gBeef tallow
  • 1000 gSugar
  • 1000 gRaisin
  • 2000 gApple
  • 568 mlWine
  • 568 mlCider
  • 4 gNutmeg
  • 6 gOrange zest
  • 360 gWheat flour
  • 200 gButter
  • 1 pcsEgg
  • 40 mlWater

    Prepare the filling

    • Finely chop the boiled beef or pass it once through a coarse grinder.
    • In a large bowl combine beef, suet, sugar, raisins and chopped apples.
    • Add wine and cider and mix until the mixture is spreadable but not overly liquid.
    • Stir in grated nutmeg and orange zest to taste. Add more sugar if needed.

    Shape and bake pies

    • Preheat oven to 190 °C (375 °F) conventional.
    • Roll out the pastry and cut rounds for the pie bases. Line muffin tins or small pie pans with the bases.
    • Portion the filling into the pastry bases and top with lids or pastry lattices.
    • Bake 20–30 minutes until the pastry is golden.
    • Serve warm; dust with icing sugar if desired.
