- 500 gBeef tallow
- 1000 gSugar
- 1000 gRaisin
- 2000 gApple
- 568 mlWine
- 568 mlCider
- 4 gNutmeg
- 6 gOrange zest
- 360 gWheat flour
- 200 gButter
- 1 pcsEgg
- 40 mlWater

Prepare the filling
- Finely chop the boiled beef or pass it once through a coarse grinder.
- In a large bowl combine beef, suet, sugar, raisins and chopped apples.
- Add wine and cider and mix until the mixture is spreadable but not overly liquid.
- Stir in grated nutmeg and orange zest to taste. Add more sugar if needed.

Shape and bake pies
- Preheat oven to 190 °C (375 °F) conventional.
- Roll out the pastry and cut rounds for the pie bases. Line muffin tins or small pie pans with the bases.
- Portion the filling into the pastry bases and top with lids or pastry lattices.
- Bake 20–30 minutes until the pastry is golden.
- Serve warm; dust with icing sugar if desired.
