- 120 mlCoconut milk
- 15 mlSoy sauce
- 15 mlSesame oil
- 5 gChili flakes
- 6 gGinger

Prepare the marinade
- In a bowl whisk together coconut milk, soy sauce, sesame oil, crushed red pepper, minced ginger and black pepper.
- Place the cod fillets in the marinade so they are coated and refrigerate for 15 minutes.

Bake
- Preheat the oven to 175 °C.
- Lightly oil a baking tray with 5 ml vegetable oil and place the marinated fillets on it.
- Bake for 12–15 minutes until the fish flakes easily.

Garnish and serve
- Plate the cooked fillets.
- Sprinkle with toasted coconut flakes and chopped fresh mint and serve immediately.
