  • 120 mlCoconut milk
  • 15 mlSoy sauce
  • 15 mlSesame oil
  • 5 gChili flakes
  • 6 gGinger
  • 6 gPepper
  • 425 gCod
  • 2 gMint
  • 7 gCoconut flakes
  • 5 mlOil

Instructions

    Prepare the marinade

    • In a bowl whisk together coconut milk, soy sauce, sesame oil, crushed red pepper, minced ginger and black pepper.
    • Place the cod fillets in the marinade so they are coated and refrigerate for 15 minutes.

    Bake

    • Preheat the oven to 175 °C.
    • Lightly oil a baking tray with 5 ml vegetable oil and place the marinated fillets on it.
    • Bake for 12–15 minutes until the fish flakes easily.
  3. 3

    Garnish and serve

    • Plate the cooked fillets.
    • Sprinkle with toasted coconut flakes and chopped fresh mint and serve immediately.
