Prepare
- Measure and prepare all ingredients.
- Mince the garlic, slice the red onion, chop the chillies, and cut the scallions into 1 cm pieces.
- Fluff the cooked rice with a fork.

Fry the crab
- Heat 2 tbsp olive oil in a wok or large pan until hot.
- Stir-fry the drained crab (200 g) for about 1 minute until it changes color. Remove and set aside.

Fry aromatics
- Add the remaining 3 tbsp oil to the pan and heat.
- Stir-fry garlic, red onion, scallions and chillies about 1 minute until fragrant.

Add crab and sprouts
- Return the fried crab to the pan.
- Add bean sprouts (150 g) and stir briefly until heated through.

Add rice and season
- Add cooked rice (500 g), fish sauce (2 tbsp), salt (1 tbsp) and black pepper (1 tbsp).
- Stir well until evenly mixed and hot. Serve immediately.
