Prepare apples
- Preheat oven to 180 °C (350 °F) conventional or 170 °C fan.
- Peel apples and core them leaving the stem end intact.
- Fill each apple cavity with about 1 teaspoon of jam.
- Grease a baking dish with about 20 g butter and place the apples side by side.

Make the batter
- In a small saucepan, heat 125 g flour with 64 g butter and 230 ml milk over medium heat, stirring constantly, until a thick dough forms and pulls away from the pan. Remove from heat and cool.
- Cream another 64 g soft butter with 6 egg yolks, 25 g sugar and grated lemon zest.
- Stir the cooled flour-milk mixture into the butter-egg mixture.
- Beat the 6 egg whites until stiff and gently fold them into the batter.

Bake and serve
- Pour the batter evenly over the filled apples in the baking dish.
- Bake for about 60 minutes until golden brown and apples are tender.
- Serve warm straight from the dish. Optionally dust with powdered sugar or serve with vanilla sauce.
