- 250 gPotato

Preparation
- Finely chop or grind the cooked beef if needed.
- Pass cooked potatoes through a sieve (or mash very finely) until you have a smooth potato pulp.
- Finely chop the onion and sauté in 10 g butter over medium heat until soft and translucent; let cool.

Mixing and shaping
- Combine beef, potato pulp, cooled onion, chopped parsley, eggs, salt, pepper and grated nutmeg in a large bowl and mix thoroughly.
- Shape into equal patties (about 8 fricadelles, or 4 larger ones), using slightly wet hands if the mixture is sticky.

Frying
- Melt the remaining 30 g butter in a frying pan over medium-high heat.
- Fry the patties in batches for 3–5 minutes per side until golden-brown and heated through.
- Drain briefly on paper towel and serve warm. Serve with tomato sauce, a spicy sauce, spinach or chicory if desired.
