  • 600 gBeef
  • 250 gPotato
  • 45 gOnion
  • 40 gButter
  • 5 gParsley
  • 2 pcsEgg
  • 8 gSalt
  • 1 gPepper
  • 0.5 gNutmeg

    Preparation

    • Finely chop or grind the cooked beef if needed.
    • Pass cooked potatoes through a sieve (or mash very finely) until you have a smooth potato pulp.
    • Finely chop the onion and sauté in 10 g butter over medium heat until soft and translucent; let cool.

    Mixing and shaping

    • Combine beef, potato pulp, cooled onion, chopped parsley, eggs, salt, pepper and grated nutmeg in a large bowl and mix thoroughly.
    • Shape into equal patties (about 8 fricadelles, or 4 larger ones), using slightly wet hands if the mixture is sticky.

    Frying

    • Melt the remaining 30 g butter in a frying pan over medium-high heat.
    • Fry the patties in batches for 3–5 minutes per side until golden-brown and heated through.
    • Drain briefly on paper towel and serve warm. Serve with tomato sauce, a spicy sauce, spinach or chicory if desired.
