Soak mushrooms
- Bring the pork broth (240 ml) to a boil in a small saucepan.
- Add the dried shiitake mushrooms (28 g) and simmer over low heat about 10 minutes until softened.

Make the sauce
- Whisk together rice vinegar, soy sauce, honey and red pepper flakes in a small bowl and set aside.

Brown the chops
- Heat sesame oil in a large non-stick skillet over medium heat.
- Add the pork chops (4 pieces, about 150 g each) and brown about 2 minutes per side.
- Add garlic and ginger and cook until fragrant.

Simmer sauce
- Stir in the soy sauce mixture and bring to a boil.
- Reduce heat and simmer uncovered for 5 minutes.

Add mushrooms and broth
- Remove the mushrooms with a slotted spoon, slice thinly and stir back into the pan with the pork chops along with the soaking broth.
- Simmer uncovered over low heat until the sauce is reduced by about one third and the chops are cooked through.

- Place pork chops on plates and spoon mushroom sauce over them.
- Garnish and serve immediately.
