  • 600 gPork chop
  • 240 mlBroth
  • 28 gShiitake
  • 60 mlRice vinegar
  • 30 mlSoy sauce
  • 30 mlHoney
  • 0.25 tspChili flakes
  • 10 mlSesame oil
  • 4 pcsGarlic
  • 15 mlGinger

Instructions

    Soak mushrooms

    • Bring the pork broth (240 ml) to a boil in a small saucepan.
    • Add the dried shiitake mushrooms (28 g) and simmer over low heat about 10 minutes until softened.

    Make the sauce

    • Whisk together rice vinegar, soy sauce, honey and red pepper flakes in a small bowl and set aside.

    Brown the chops

    • Heat sesame oil in a large non-stick skillet over medium heat.
    • Add the pork chops (4 pieces, about 150 g each) and brown about 2 minutes per side.
    • Add garlic and ginger and cook until fragrant.

    Simmer sauce

    • Stir in the soy sauce mixture and bring to a boil.
    • Reduce heat and simmer uncovered for 5 minutes.

    Add mushrooms and broth

    • Remove the mushrooms with a slotted spoon, slice thinly and stir back into the pan with the pork chops along with the soaking broth.
    • Simmer uncovered over low heat until the sauce is reduced by about one third and the chops are cooked through.

    Serve

    • Place pork chops on plates and spoon mushroom sauce over them.
    • Garnish and serve immediately.
