Prepare
- Cut the white bread into pieces and soak briefly in the milk, then squeeze out well.
- Preheat oven to 160 °C (320 °F). Butter a pudding mold (about 1–1.5 l).

Make the pudding base
- Cream the softened butter, sugar, egg yolks and ground almonds with a pinch of cinnamon.
- Stir in the squeezed bread pieces until a smooth, dense mixture forms.

Fold in grapes and egg whites
- Wash and stem the grapes, halve if large, and fold into the batter.
- Whisk the egg whites to stiff peaks and gently fold into the batter to keep air in the mixture.

Bake / Steam
- Fill the buttered mold with the mixture and level the surface.
- Place the mold into a larger roasting tin, pour in hot water for a bain‑marie so the mold stands halfway in water.
- Bake in the preheated oven at 160 °C for about 120 minutes until set. Allow to cool slightly before serving.

- Serve warm or lukewarm. A light foam sauce (e.g. vanilla foam) or unsweetened cream is recommended.
