Preparation
- Truss the whole chicken: spatchcock it by cutting along the back, flatten and pat dry.
- Preheat the oven to 200 °C (390 °F).
- Season the chicken inside and out with salt and pepper.

Partially roast in the oven
- Place the chicken breast-side up on a baking tray.
- Melt half the butter (30 g) and brush the chicken all over.
- Roast in the preheated oven 20–25 minutes until the chicken is about halfway cooked (internal ~60–65 °C).

Finish with mustard and grill
- Remove the chicken from the oven and spread mustard evenly over it.
- Sprinkle breadcrumbs over the mustard-coated areas, especially the breast and thighs.
- Drizzle the remaining melted butter (30 g) over the crumbs.
- Finish under a hot grill/broiler for 6–12 minutes until the crust is golden and crisp and the internal temperature reaches 75 °C.
- Let rest 5 minutes before carving and serving.
