  • 1200 gLamb breast
  • 600 mlBroth
  • 50 gButter
  • 100 gBreadcrumbs
  • 1 tbspOlive oil
  • 1 pcsOnion
  • 2 cloveGarlic
  • 10 gParsley
  • 10 gSalt
  • 5 gPepper

Instructions

    Preparation

    • Trim excess fat from the lamb breast if needed.
    • Peel and halve the onion, lightly crush the garlic.
    • Preheat oven or grill if finishing under a broiler.

    Braising / Cooking

    • Place the lamb breast in a deep pot with the stock, onion and garlic.
    • Bring to a simmer, reduce heat and braise covered for 60–90 minutes until very tender.
    • Remove, let cool slightly, debone and cut into rectangles (approx. 4 × 6 cm) or heart shapes.

    Breading and Grilling

    • Pat the meat pieces dry with paper towel.
    • Brush pieces all over with melted butter.
    • Turn them in the breadcrumbs so they are evenly coated.
    • In a hot pan with 1 tbsp olive oil or under a preheated broiler, cook 3–5 minutes per side until the crust is golden and crisp.
    • Sprinkle with chopped parsley and serve immediately.

    To serve

    • Arrange the grilled lamb pieces on warm plates.
    • Serve with lemon wedges or chosen side dishes (potatoes, green vegetables).
