Prepare the glaze
- Whisk honey, soy sauce and sake in a small bowl until the honey dissolves.
- Stir about half of the sesame seeds into the glaze and set aside the rest for garnish.

Marinate the salmon
- Brush the salmon with the glaze and let sit for 5–10 minutes to absorb flavors.
- Reserve any excess glaze for cooking.

Pan-fry
- Heat a skillet over medium to medium-high heat and add the olive oil.
- Sear the salmon skin-side down (if present) for 3–4 minutes, then flip.
- Add the reserved glaze to the pan and cook another 3–4 minutes until salmon is cooked through and the glaze thickens and caramelizes.
- Lower the heat if the glaze starts to burn.

- Place salmon on plates and sprinkle with the remaining sesame seeds.
- Serve immediately (optional: garnish with sliced spring onion or lemon).
