  • 8 pcsEgg yolk
  • 8 pcsEgg white
  • 112 gButter
  • 75 gSugar
  • 60 mlLemon
  • 250 gPuff pastry

    Preparation

    • Preheat the oven to 180 °C (350 °F) conventional.
    • Grease a round springform or tart tin (approx. 26–28 cm) or line with baking paper.
    • Roll out the puff pastry and fit it into the tin, forming a small edge.

    Make the filling

    • Peel (or partially peel) and finely grate the apples.
    • Stir egg yolks, melted butter, sugar, lemon juice and lemon zest together in a large bowl.
    • Fold the grated apples into the yolk mixture until uniform.

    Fold in egg whites and fill

    • Whisk egg whites to stiff peaks.
    • Gently fold the egg whites into the apple-yolk mixture in portions until blended.
    • Spread the filling evenly over the puff pastry in the tin.

    Baking

    • Bake in the preheated oven at 180 °C for about 35–45 minutes.
    • After about 20 minutes, loosely cover the tart with baking paper so the surface browns lightly but stays golden.
    • Remove, let cool slightly in the tin, then release and cool further or serve warm.

    To serve

    • Optionally dust with powdered sugar or serve with whipped cream.
    • Slice and enjoy.
