Preparation
- Preheat oven to 200 °C (390 °F).
- Line a baking sheet with parchment paper or lightly butter it.

Make the batter
- Melt the butter slowly in a small saucepan, skim off any foam (clarify) and let it cool slightly.
- In a large bowl, whisk the whole eggs with the sugar gradually until the mixture lightens.
- Stir in the grated lemon zest.
- Slowly add the melted, slightly cooled butter to the egg-sugar mixture while stirring.
- Fold in the fine flour in portions until you have a smooth, relatively thin batter.

Top and bake
- Spread the batter in a layer about the thickness of a knife spine evenly on the prepared sheet.
- Mix the sliced almonds with the reserved sugar (about 30 g) and cinnamon and sprinkle evenly over the batter.
- Bake immediately at 200 °C for about 10–12 minutes until the top is light golden.
- Remove from the oven and cut diagonally into diamond shapes while still warm on the sheet.

- Remove the slightly warm diamonds from the baking sheet and let cool on a rack or serve warm.
