    Preparation

    • Preheat oven to 200 °C (390 °F).
    • Line a baking sheet with parchment paper or lightly butter it.

    Make the batter

    • Melt the butter slowly in a small saucepan, skim off any foam (clarify) and let it cool slightly.
    • In a large bowl, whisk the whole eggs with the sugar gradually until the mixture lightens.
    • Stir in the grated lemon zest.
    • Slowly add the melted, slightly cooled butter to the egg-sugar mixture while stirring.
    • Fold in the fine flour in portions until you have a smooth, relatively thin batter.

    Top and bake

    • Spread the batter in a layer about the thickness of a knife spine evenly on the prepared sheet.
    • Mix the sliced almonds with the reserved sugar (about 30 g) and cinnamon and sprinkle evenly over the batter.
    • Bake immediately at 200 °C for about 10–12 minutes until the top is light golden.
    • Remove from the oven and cut diagonally into diamond shapes while still warm on the sheet.

    To serve

    • Remove the slightly warm diamonds from the baking sheet and let cool on a rack or serve warm.
