  • 200 gBeef
  • 320 gPotato
  • 150 gOnion
  • 360 mlWater
  • 30 mlMirin
  • 45 mlSoy sauce
  • 25 gSugar
  • 5 gGinger
  • 100 gShirataki noodles

    Prepare

    • Peel (optional) and cut the potatoes into bite-sized pieces. Soak in cold water to remove excess starch.
    • Peel and slice the onion. Prepare the slice of ginger.
    • Rinse the shirataki noodles briefly under running water and drain.

    Make the broth

    • Combine mirin, soy sauce, sugar, the ginger slice and the sliced beef in a saucepan.
    • Bring to a light boil and simmer 2–3 minutes so the beef takes on flavor.
    • Remove the beef from the pan and set aside.

    Cook

    • Add the potatoes, sliced onion and 360 ml water to the pan and bring to a boil.
    • Simmer uncovered until the liquid is reduced to about one third and the potatoes are tender (about 15–20 minutes).
    • Return the beef to the pan, add the shirataki noodles and simmer about 5 more minutes to combine flavors.
    • Remove the ginger slice, adjust seasoning if needed and serve hot.
