- 320 gPotato
- 150 gOnion
- 360 mlWater
- 30 mlMirin
- 45 mlSoy sauce
- 25 gSugar

- 100 gShirataki noodles

Prepare
- Peel (optional) and cut the potatoes into bite-sized pieces. Soak in cold water to remove excess starch.
- Peel and slice the onion. Prepare the slice of ginger.
- Rinse the shirataki noodles briefly under running water and drain.

Make the broth
- Combine mirin, soy sauce, sugar, the ginger slice and the sliced beef in a saucepan.
- Bring to a light boil and simmer 2–3 minutes so the beef takes on flavor.
- Remove the beef from the pan and set aside.

Cook
- Add the potatoes, sliced onion and 360 ml water to the pan and bring to a boil.
- Simmer uncovered until the liquid is reduced to about one third and the potatoes are tender (about 15–20 minutes).
- Return the beef to the pan, add the shirataki noodles and simmer about 5 more minutes to combine flavors.
- Remove the ginger slice, adjust seasoning if needed and serve hot.
