Make the dough
- Line a large microwave-safe plate with parchment paper.
- Beat the butter and brown sugar in a small bowl until light and fluffy.
- Beat in the vanilla and the egg until combined.
- Sift the flour and salt over the mixture and fold in gently until just combined.
- Fold in about three quarters of the chocolate chips.

- Scoop the dough into the centre of the prepared plate, shaping into a round cookie (about 8–10 cm).
- Decorate with the remaining chocolate chips.
- Microwave for 1.5–2 minutes on high, adjusting for your microwave's power.
- Let cool for a few minutes — the cookie will firm up but remain soft inside.
