  • 20 mlWater
  • 80 gMargarine
  • 75 gSugar
  • 1 pcsEgg
  • 2 gLemon zest
  • 15 mlLemon juice
  • 65 gFlour
  • 12.5 gPowdered sugar
  • 1 gRaspberry
  • 1 gCream

    Preparation

    • Lightly grease four microwave‑safe ramekins (about 150 ml each) or use cooking spray.
    • No preheating required – puddings are cooked in the microwave.

    Prepare lemon curd layer

    • Stir the lemon curd and the hot water together in a small bowl until smooth.
    • Spoon the mixture into the ramekins, dividing it between them.

    Make the batter

    • Beat the margarine and sugar until creamy.
    • Beat in the egg and lemon zest.
    • Fold in the self‑raising flour, then stir in the lemon juice until smooth.

    Cook and serve

    • Divide the batter between the ramekins and smooth the tops.
    • Place the ramekins on a microwave‑safe plate and microwave for about 4 minutes. Let stand 1 minute.
    • Dust with powdered sugar and serve with raspberries and crème fraîche if desired.
