  • 200 gPak choi
  • 2 pcsGreen onion
  • 15 gGinger
  • 2 cloveGarlic
  • 10 gRapeseed oil
  • 900 mlWater
  • 45 gMiso
  • 20 gSoy sauce
  • 180 gRamen noodle
  • 10 gSesame

Instructions

    Prep vegetables

    • Cube the pumpkin
    • Wash and roughly chop bok choy
    • Slice spring onions
    • Grate ginger
    • Finely chop garlic

    Start the broth

    • Heat oil
    • Sweat garlic and ginger
    • Briefly toast pumpkin
    • Add water
    • Simmer until pumpkin is tender

    Stir in miso

    • Whisk miso with a little broth until smooth
    • Return to the pot
    • Season with soy sauce
    • Do not boil hard anymore

    Cook noodles

    • Cook noodles according to package
    • Drain and briefly rinse

    Finish bok choy

    • Add bok choy to the broth
    • Let it wilt briefly
    • Divide noodles into bowls
    • Pour broth over
    • Top with spring onions and sesame
