Ingredients

  • 50 gSugar
  • 45 gCocoa powder
  • 50 gEgg
  • 200 gCookie
  • 100 gCoconut flakes
  • 50 gAlmond
  • 150 gButter
  • 60 gCream
  • 30 gPudding powder
  • 250 gPowdered sugar
  • 150 gDark chocolate

Instructions

    Make the base

    • Line a 20 cm square tin with baking paper.
    • Melt the butter with the caster sugar and cocoa powder in a heatproof bowl over simmering water, stirring occasionally until smooth.
    • Whisk in the beaten egg for 2–3 minutes until the mixture thickens slightly. Remove from heat.
    • Stir in the biscuit crumbs, desiccated coconut and chopped almonds, then press the mixture firmly into the prepared tin.
    • Chill for about 10 minutes until the base is set.

    Custard middle layer

    • Whisk the butter, cream and custard powder until light and fluffy.
    • Gradually add the icing sugar and continue whisking until smooth and spreadable.
    • Spread over the chilled base and chill until set (at least 10 minutes).

    Chocolate topping & finish

    • Melt the dark chocolate with the butter in short bursts in the microwave or over a bain-marie and stir until smooth.
    • Pour and spread the chocolate over the chilled bars and return to the fridge.
    • Leave until the chocolate is fully set (about 2 hours), then remove from the tin and cut into squares.
