- 15 mlFish sauce

Preparation
- Fluff the cooked rice with a fork if clumped.
- Slice shallots thinly.
- Peel and mince the garlic.
- Halve and slice the red chili into thin strips.
- Beat the eggs in a small bowl.
- Slice cucumber for garnish.

Stir-frying
- Heat a wok or large pan over high heat.
- Add coconut oil (10 ml) and heat.
- Stir-fry shallots, chili and garlic until the garlic just turns golden.
- Add beaten eggs, stir until partly set.
- Add the steamed rice and stir-fry until everything is well combined and hot.

Seasoning & Serving
- Add fish sauce (1 tbsp), sweet soy sauce (1.5 tbsp) and salty soy sauce (1 tbsp) and mix well.
- Season with ground pepper to taste.
- Serve topped with cucumber slices (and optional tomato wedges).
- Serve immediately.
