Ingredients

  • 300 gRice
  • 2 pcsEgg
  • 5 gGarlic
  • 30 gShallot
  • 15 gChili
  • 15 mlFish sauce
  • 10 mlCoconut oil
  • 37.5 mlSoy sauce
  • 0.25 tspPepper
  • 50 gCucumber

Instructions

    Preparation

    • Fluff the cooked rice with a fork if clumped.
    • Slice shallots thinly.
    • Peel and mince the garlic.
    • Halve and slice the red chili into thin strips.
    • Beat the eggs in a small bowl.
    • Slice cucumber for garnish.

    Stir-frying

    • Heat a wok or large pan over high heat.
    • Add coconut oil (10 ml) and heat.
    • Stir-fry shallots, chili and garlic until the garlic just turns golden.
    • Add beaten eggs, stir until partly set.
    • Add the steamed rice and stir-fry until everything is well combined and hot.

    Seasoning & Serving

    • Add fish sauce (1 tbsp), sweet soy sauce (1.5 tbsp) and salty soy sauce (1 tbsp) and mix well.
    • Season with ground pepper to taste.
    • Serve topped with cucumber slices (and optional tomato wedges).
    • Serve immediately.
