Preparation
- Heat 1½ tbsp cooking oil in a large pan or wok over high heat until hot.
- Add 5–10 Thai chilis (about 8) and 5 cloves finely chopped garlic to the hot oil and stir-fry for about 10 seconds until aromatic.
- Add 500 g lean minced chicken and stir-fry with a spatula until nearly cooked (about 2–3 minutes).
- When the chicken is nearly done, add 125 g finely chopped green beans and stir-fry for 1–2 minutes.
- Add 2 tbsp fish sauce, 3 tbsp oyster sauce and a pinch of sugar. Stir-fry for 2 minutes until combined.
- Turn off the heat, add 15–20 Thai or sweet basil leaves and stir for about 5 seconds.
- Serve with rice and optionally top with a fried egg.
