Make the sauce
- Whisk all sauce ingredients in a small bowl until the sugar dissolves. Set aside.

Prepare noodles and veg
- Soak the rice stick noodles according to package directions (about 8–12 minutes in hot water) until soft but slightly firm. Drain and set aside.
- Wash the Chinese broccoli, cut thick stems on the diagonal into 2–3 cm pieces and roughly chop the leaves.
- Peel and mince the garlic. Cut the chicken into thin strips.

Finish in the wok
- Heat a wok or large frying pan over high heat. Add the oil.
- Stir-fry the garlic briefly in the hot oil, then add the chicken and the thicker broccoli stems. Cook until the chicken is lightly golden (about 3–4 minutes).
- Push everything to the side, crack the egg into the empty space and scramble; a little sticking and charring is fine and gives flavor.
- Add the noodles, broccoli leaves and the sauce. Toss together until the noodles are evenly darkened and the leaves have wilted (1–2 minutes).
- Serve immediately.
