Ingredients

  • 180 gRice noodle
  • 40 gSoy sauce
  • 30 gOyster sauce
  • 10 gVinegar
  • 8.4 gSugar
  • 30 gWater
  • 27.6 gOil
  • 6 gGarlic
  • 140 gChicken breast
  • 1 pcsEgg
  • 240 gChinese broccoli

    Make the sauce

    • Whisk all sauce ingredients in a small bowl until the sugar dissolves. Set aside.

    Prepare noodles and veg

    • Soak the rice stick noodles according to package directions (about 8–12 minutes in hot water) until soft but slightly firm. Drain and set aside.
    • Wash the Chinese broccoli, cut thick stems on the diagonal into 2–3 cm pieces and roughly chop the leaves.
    • Peel and mince the garlic. Cut the chicken into thin strips.

    Finish in the wok

    • Heat a wok or large frying pan over high heat. Add the oil.
    • Stir-fry the garlic briefly in the hot oil, then add the chicken and the thicker broccoli stems. Cook until the chicken is lightly golden (about 3–4 minutes).
    • Push everything to the side, crack the egg into the empty space and scramble; a little sticking and charring is fine and gives flavor.
    • Add the noodles, broccoli leaves and the sauce. Toss together until the noodles are evenly darkened and the leaves have wilted (1–2 minutes).
    • Serve immediately.
